These strawberry jam filled cookies are bite sized vessels of deliciousness and are perfect to serve with your favorite tea or coffee.
These mini cookies are just bites of perfection and simply taste like home. Making them is so so simple and only requires 6 ingredients.
Ingredients:
1 cup softened butter
1 cup sugar
2 cups all purpose flour
1/2 teaspoon vanilla extract
1/3 cup seedless strawberry jam
2 tablespoons water
Steps:
Using a stand mixer fitted with a paddle attachment, cream the butter and sugar together until light and fluffy. Beat in extract and slowly add in flour. Make sure everything is incorporated by scraping the sides of the bowl down with a spatula.
Cover the bowl with plastic wrap and chill the dough for 1 hour.
Roll the dough into 1 inch balls onto a baking sheet lined with parchment paper.
Using a wooden spoon handle create a small indentation in the center of each cookies. After mixing the water and jam together, to loosen thickness, spoon the jam into each cookie indent.
Bake at 350 degrees for 6-8 minutes. Transfer to wire rack too cool. Enjoy!
