Call it an elevated banana bread or just a slice a heaven, this glazed banana sheet cake is nothing short of perfection. Serve with a scoop of vanilla ice cream and or warm up on a chilly day, and watch as this cake recipe turns from a fun afternoon activity to a weekly ritual.
In all honesty, this cake and I have a love-hate relationship. Made with bananas and walnuts this recipe is one heck of a con artist. I tell myself don't worry its like banana bread ( which is not even the healthy by the way) as I cut my fourth slice and don't realize my carb overload till I have about licked the entire sheet pan clean. My words of advice: its not banana bread its better. But you know what here's to 2022 and doing as we wish, so here's how to make this delicious, correction, addictively delicious dessert.
yield: 12 -16 servings
Ingredients:
Sheet Cake
1/2 cup melted butter
2 cups flour
1/3 cup granulated sugar
3/4 teaspoon baking soda
1/2 sea salt
4 ripe banananas
1/4 cup sour cream
2 tablespoons brown sugar
2 eggs
1 teaspoon vanilla extract
Glaze
4 tablespoons butter
1/3 cup brown sugar
1/4 cup heavy cream
1/3 cup powdered sugar
Steps:
Preheat oven to 350 degrees Fahrenheit and grease and line a 9x9 inch sheet pan.
Mix together flour, granulated sugar, baking soda, and salt in a large bowl.
In another bowl, mash bananas and then combine with melted butter, sour cream, brown sugar, eggs, and vanilla extract.
Combine both mixtures together and stir until incorporated.
Pour the batter into the baking pan and smoothen with a spatula.
Bake for 20-25 minus or until a toothpick comes out clean after inserted in the cake.
Remove cake from oven and allow to cool completely in the pan before removing from the sheet pan.
Whilst the cake is cooling, create the glaze. In a medium pot add butter, brown sugar, heavy cream, and salt. Allow the mixture to come to a boil and then remove from her. Once cooled for 5-7 minutes, mix in powdered sugar until smooth.
Remove cake from pan and pour glaze over the cooled cake.
Sprinkle with sea salt and serve warm.
